Yay for Friday. . . I love the weekend! Happy Mother’s Day to everyone! Hopefully you’ve got fun plans for the weekend and can enjoy beautiful weather wherever you are. We will be enjoying temps in the low 80s today only to have it drop to the 55 tomorrow . . . oh sometimes I hate Utah weather!
If you haven’t ever had the Thai Chicken Crunch Slaw Salad, you need to make it. I have a little confession to make, I actually made it last night for dinner because when I was preparing this meal plan and included it in the menu, I couldn’t stop thinking about it. It’s been way too long since I’ve made it and I couldn’t wait so we enjoyed it last night for dinner. My non-salad-loving son Taylor’s comment as he was eating it was, “Mom, only you could get me to like salad.” 😂 Yes, it’s that good! Oh, and I could drink the dressing! Please try it!
