I can’t believe it’s June! School is out and the excitement of summer fun has begun! I love seeing kids outside riding bikes and scooters and enjoying summer break! I really miss those days of young kiddos in my house!

The lineup for this week’s menu is a good one! Breakfast for dinner is always a favorite at our house, and my mom’s whole wheat pancakes. The simple beef taquitos are so good and even your picky kids will love them. Make a double or triple batch and keep them in your freezer for a quick lunch or snack for your kids to enjoy while they are out of school for the summer. If you love cinnamon rolls, but hate how long they can take to make, then you’re going to love the no yeast cinnamon rolls! SO DELICIOUS!

1 1/4 cups steel cut oats
1 cup pumpkin
1/3 cup brown sugar
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1/4 teaspoon fresh grated nutmeg
2 cups milk
3 cups water
1 teaspoon vanilla
1/2 teaspoon salt
Berries (fresh or frozen)
chocolate chips
apples
craisins
brown sugar
nuts (pecans, almonds, walnuts, etc)
half-n-half

SEASONING MIX: 😋
2 tablespoons kosher salt

2 teaspoons garlic powder

BURGERS: 🍔
1 pound 80% lean ground beef (or 85% extra lean is fine too)
4 slices of American cheese (I use Kraft singles)
1 burger bun, split
Softened or melted butter

1 cup jalapeño peppers, finely chopped, (membranes and seeds removed or leave in for extra heat)
6 cups tomatoes, peeled, chopped and drained
