It’s Friday already again and time for another weekly menu plan. So many of my favorites this week!
If you haven’t ever made my spaghetti squash Monterey then you are missing out! This is the first year in a long time I haven’t had spaghetti squash in my garden. I planted one and it died a few weeks later (which has never happened before!). I went to four or five different places to buy another one and could not find a single spaghetti squash plant🥲. I talked to a guy from Bonnie Plants who was restocking plants and he told me I probably wouldn’t find one anywhere because they ran out of seed. So, sadly this year I’ll be buying my spaghetti squash from the store instead of walking out to my garden and picking one. . . BUMMER!
The instant pot chicken enchiladas are a favorite and I know you’re going to love them! The Mexican hash is so good and total comfort food! If you love a good bar cookie, then you definitely need the triple layers bars in your life!
