Ranger Cookies



  • 2 cups margarine (don't use butter!)
  • 2 cups sugar
  • 2 cups brown sugar
  • 1 Tbsp. vanilla
  • 4 eggs
  • 4 tsp. baking soda
  • 1 tsp. baking powder
  • 4 cups flour
  • 4 cups oatmeal
  • 4 cups Rice Krispies cereal
  • 1 (10-oz) package Heath or Skor toffee bits


  1. Cream margarine, sugars, eggs and vanilla.  Add baking soda, baking powder and flour, blend well.
  2. Stir in oatmeal, Rice Krispies and toffee chips. Mix well.
  3. Roll into balls using a cookie scoop and place on an ungreased cookie sheet.
  4. Bake at 350 degrees for 10-12 minutes.
  5. Remove from oven and tap cookie sheet firmly on the counter to flatten the cookies.

Recipe Notes

I love these best with Skor toffee bits but they stopped selling them in grocery stores years ago.  I'm lucky enough to have a "connection" and my friend's husband ordered them through one of their food suppliers.  You can buy them online here , they are a little pricey, but so worth it.  If you keep them store in your freezer, they will stay fresh for a really long time.  I have used the Heath toffee bits, and they cookies are still delicious, I just prefer the Skor bits.
