Oatmeal Pumpkin Carmelitas

Ingredients

  • 1 pkg. (14 oz) caramels, unwrapped (about 50 caramels)
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup pumpkin puree
  • 1 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • Crust Layer
  • 2 1/2 sticks melted butter
  • 1 1/2 cups brown sugar
  • 2 cups flour
  • 2 cups oatmeal
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 1/4 cups semi-sweet chocolate chips
  • 1 1/4 cups butterscotch chips

Instructions

  1. Preheat oven to 350 degrees. Spray a 9x13 pan and set aside.
  2. In a medium saucepan melt caramels and sweetened condensed milk together over medium-low heat, stirring often. Once melted and smooth, remove from heat and add pumpkin puree, cinnamon and pumpkin pie spice. Stir until well combined and set aside.
  3. In a large bowl, combine melted butter, brown sugar, flour, oatmeal, salt, baking soda and cinnamon. Mix until well combined. Press 2/3 of the mixture into the prepared pan. Bake for 10 minutes.
  4. Remove from oven and pour caramel mixture evenly over partially baked crust. Sprinkle chocolate chips and butterscotch chips evenly over caramel layer and then evenly sprinkle remaining oatmeal mixture over top.
  5. Return to oven and bake for 20-25 minutes or until edges begin to turn a golden brown.
