Apple Cranberry Cake w/ Nutmeg Butter Sauce {12 Days of Sugar - Day 9}

Ingredients

  • CAKE:
  • 3 cups flour
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 2 eggs
  • 1 1/2 tsp. almond extract
  • 1 tsp. vanilla
  • 1 tsp. lemon zest
  • 1 1/2 cups cranberries
  • 2 cups shredded tart , pared apples (I used granny smith)
  • BUTTER SAUCE:
  • 2 cups sugar
  • 1 cup butter
  • 1 cup heavy cream
  • 1 Tbsp vanilla
  • 1/2 tsp. nutmeg (fresh grated is best!!)

Instructions

  1. Spray a 9x13 pan. Set aside. Preheat oven to 350 degrees.
  2. Sift flour, baking soda and salt, set aside.
  3. In a bowl of an electric mixer, combine sugar, oil and eggs and extracts. Mix well. Add dry ingredients, mixing until smooth. Add lemon zest and apples, mix well. Stir in cranberries.
  4. Pour into prepared pan and bake 45-50 minutes or until an inserted toothpick comes out clean.
  5. Serve warm with nutmeg butter sauce.
  6. To make sauce: Combine all ingredients in a medium saucepan over low heat stirring until mixtures comes to a boil. Remove from heat, stir in vanilla and nutmeg.
