Grilled Chipotle Chicken Tacos

Delicious and simple these tacos are the perfect summertime dinner and the best part is there's no oven required.

  • 1/4 cup olive oil
  • 1 1/4 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/4 cup lime juice
  • Zest of one lime
  • 4 chicken breasts
  • 8 - 10 corn tortillas
  • Garnishes:
  • Shredded cabbage (or lettuce)
  • Grated cheese
  • Avocado
  • Chipotle Sauce:
  • 1/4 cup mayonnaise
  • 2 Tbsp. sour cream
  • 1 garlic clove , minced
  • 1 Tbsp. Lime juice
  • 1/2 - 1 Tbsp. chipotle peppers in adobo sauce , finely chopped (depending on how much kick you want)
  • Pinch of salt


  1. In a Ziplock bag, combine the olive oil, cumin, chili powder, lime juice and zest. Add the chicken breasts and seal bag and place in fridge and marinate for at least 4 hours or up to 24 hours. Grill marinated chicken and cook for 5-7 minutes per side. Remove from grill and place on plate and cover with foil for about 5 minutes. Cut chicken into bite-size pieces.
  2. For chipotle sauce combine all ingredients and mix well
  3. Warm corn tortillas in a pan or in the microwave. Fill shells with chicken, shredded cabbage and cheese. Drizzle with chipotle sauce.
  4. Serve and enjoy.
