Yam Casserole

Ingredients

  • 4-5 large sweet potatoes, cooked & peeled
  • 2 eggs
  • 1/2 cup brown sugar
  • 4 tablespoon melted butter
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • 1/3 cup milk

TOPPING:

  • 1 cup brown sugar
  • 2 eggs
  • 1 cup chopped pecans
  • 1/3 cup flour
  • 3 tablespoon melted butter

Instructions

  1. To prepare yams, place them in a large pot; cover with water. Bring to a boil. Reduce heat, and simmer 20 minutes or until tender; drain. Cool.
  2. Place potatoes in a large bowl, brown sugar, eggs, melted butter, salt, vanilla, nutmeg and milk. Beat with a mixer at medium speed until smooth. Pour potato mixture into a 13 x 9–inch baking pan coated with cooking spray.
  3. To prepare topping, combine all ingredients and mix until combined. Spread evenly over yam mixture.
  4. Bake at 350° for 30 minutes or just golden.
