  • 1 1/4 cups all-purpose flour
  • 1 cup quick oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup(12 tablespoons) butter, softened
  • 1 1/4 cups brown sugar
  • 2/3 cup crunchy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (milk or semi-sweet)
  • 2/3 cup pretzel sticks, coarsely crushed
  • flaked sea salt, for sprinkling


  1. Preheat oven to 350 degrees. Line two baking sheet with parchment paper.

  2. Combine the flour, oats, baking soda, and salt in a bowl. Set aside.
  3. In a stand mixer, beat butter and sugar until smooth (about a minute). Add the peanut butter, egg, and vanilla and mix until combined. Slowly add the flour mixture until just combined.
  4. Add the chocolate chips and pretzels and mix until just combined. Refrigerate dough 1 hour.

  5. Preheat oven to 350 degrees and line baking sheet with parchment paper. Scoop 2 tablespoons of dough for each ball and roll dough in a ball, gently press with the palm of your hand to slightly flatten them (just barely).

  6. Bake 9 to 12 minutes or until cookies crack on top and are barely golden brown. Let cookies cool on the baking sheet for 5 minutes and sprinkle with salt (if desired) while cooling.
